Vinification Mechanical harvesting. Traditional vinification by grape variety in temperature-controlled vats, pre-fermentation maceration at 22°C, daily pumping over during alcoholic fermentation at a controlled temperature of between 26 and 28°C, vatting for around three weeks after the start of alcoholic fermentation.
