Hand-harvested grapes, fully destemmed, with direct pressing for all varieties except the Syrah, which is vinified using the saignée method. Fermentation takes place mostly in temperature-controlled stainless steel tanks (95%), with the remaining 5% aged in barrels and stirred on the lees (bâtonnage) for added texture and complexity.Color:
